Ingredients
- 3 tbsp Avonaise
- 1 lb Wild caught salmon
- 2 Avocados, ripe
- 2 tbsp capers, scallions or caviar for garnish
- 1 tbsp chipotles, pureed canned
- 2 tbsp fresh lime juice
- Salt and pepper To taste

Instructions
- Chop the capers.
- Mix the chipotles, Avonaise and lime juice. Season with salt and pepper.
- Slice the salmon thinly.
- Slice the avocado thinly.
- Place a slice of salmon on a plate - place two slices of avocado on the salmon. Repeat with remaining salmon and avocado.
- Spoon a line of Avonaise mixture perpendicularly across the salmon and avocados slices.
- Garnish with capers, scallions or caviar.
