Salmon Avocado Avonaise Tartare

  1. Chop the capers.
  2. Mix the chipotles, Avonaise and lime juice. Season with salt and pepper.
  3. Slice the salmon thinly.
  4. Slice the avocado thinly.
  5. Place a slice of salmon on a plate - place two slices of avocado on the salmon. Repeat with remaining salmon and avocado.
  6. Spoon a line of Avonaise mixture perpendicularly across the salmon and avocados slices.
  7. Garnish with capers, scallions or caviar.
